Stuffed Mushrooms 9 October, 2007

This time I’m posting an entry plate that I really like. Can be served as a tapa. This is really an Iberic food.

Ingredients:

Mushrooms (Agaricus bisporu) – as many as you like to eat.

1 Pork sausage

bacon in strips

toasted bread in crumbs

Olive oil

Onions

Tomato

Garlic

Black olives

Some aromatic herbs for some adittional taste

Procedure:

First we take the stipe (caule) of the mushrooms, putting the heads apart to use later as containers. Chop the stipes in little cubes.

In a pan put olive oil to fill the bottom (use plenty). After the olive oil got enought temperature, put the onions, the mushrooms stipes and the garlic (one part of a head) choped in littles cubes in the hot olive oil. Let the onions get a good yellow color and then join the pork sausage and the bacon also choped in cubes. Mix all very well. Join the tomato in cubes to the mixture. Put some salt (it’s not necessary to put any salt). Join the black olives (without the interior) and the herbs.

At the same time we can put the mushroom head filled with olive oil in a tray in the oven at a 150ºC of temperature. Leave them until the mushrooms get some brown color.

Take the mushrooms from the oven (carefully) and fill them with the pan mixture. After, put the crumb bread on top and soak it with olive oil.

Put them again in the oven until they get a dark brown color.

Take them out and serve.
